I’d like to start this blog post by telling you that I’m a liar. A LIAR.
These are not key lime bars. These are regular lime bars. But we both know that “Lime Bars” DOES NOT SOUND CUTE. So we’re calling them key lime bars because this is my blog, and I can do whatever I want. And for that same reason, I’m going to tell you my unpopular opinion.
YOU DON’T NEED TO BUY KEY LIMES. They’re smaller than regular limes, less juicy, and are normally 2-3x more expensive. Don’t do it. Other bloggers (probably named Nancy) will write “you really should use key limes, because their flavor is SO much better!” Nancy is a liar and likes to waste her money on rock-hard teeny-tiny citrus fruits.
I suppose I should stop rambling about imaginary bloggers and get to the recipe.
- 1 1/2 cups crushed Nilla wafers (I don’t like graham crackers, hate on it)
- 5 tbsp melted butter
- 1/4 cup sugar
- 1/2 tsp salt (omit if using salted butter)
- 1 14oz can condensed milk
- 1/2 cup lime juice
- zest of 1 lime
- 2 egg yolks
- 1/4 cup sour cream
- Preheat oven to 350 degrees.
- Combine wafer crumbs, salt, sugar, and melted butter. Press firmly into an 8×8 pan. Bake for 5 minutes.
- While the crust bakes, combine condensed milk, lime juice & zest, egg yolks, and sour cream.
- Pour the filling mixture into the pan & return to the oven for 10 minutes. The center should be firm.
- Set the dish into the fridge, and allow it to chill. I stuck it into the freezer because my husband was desperate to try one before we went to sleep.
- Top with whipped cream if you managed to get a can from our currently apocalyptic grocery stores.
