Hi henny. How’s quarantine treating you? Have you run out of fun activities to do? Have you lost your shit yet? Me too. Crying into my cat’s fur on a daily basis.
These are strange days we’re in. And strange days call for strange recipes. The name for this dish comes from the saying “everything but the kitchen sink.” Essentially, it’s what I had left over in my fridge on day 10 of my groceries. This recipe is made for swaps. Throw in beef, pork, mushrooms, onions, your hopes and dreams. They’ll cook up nicely.
This pasta shouldn’t be good. But it’s so freakin’ good. It’s spicy, smoky, cheesy & creamy. I ate two entire bowls last night and had to work out for an hour today to make up for it. #worthit
P.S. I know the photo is ugly. I’M SORRY, I JUST WANTED TO EAT IT.
Ingredients (serves 5-6)
- 1 16oz box spaghetti noodles
- 5 strips bacon
- 1/2 kielbasa sausage, cut into bite sized pieces
- 1 tbsp ketchup
- 2 tbsp gochuchang (you could swap for sriracha)
- 2 tsp flour
- 1 1/4 cup milk
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 3/4 cup cheddar cheese
- 1/4 cup parmesan cheese
- Cook spaghetti noodles according to package instructions
- In a large pan, cook up the bacon. Drain the bacon fat into a bowl and keep for later. Set the bacon aside & crumble.
- Throw the kielbasa into the same pan. Get it crispy, then set aside with the bacon.
- In the same pan over medium heat, add about 1 tablespoon of the reserved bacon fat. Add in the ketchup & gochuchang.
- Sprinkle flour over the ketchup, gochuchang and bacon fat. Whisk it together. Let it cook at medium low heat for around a minute.
- Pour in milk & whisk to incorporate. At this point, add your garlic powder, onion powder, and salt.
- Let the sauce simmer for a few minutes until it thickens over medium low heat.
- Once the sauce has thickened, stir in the cheddar and parmesan cheese. Taste the sauce – I believe I added a pinch more salt at this point
- Dump the drained cooked spaghetti into the pan and toss in the sauce. Top with the kielbasa and bacon.
- Eat bowls on bowls of it, and wonder how you got to this point in your life.
Note: if you don’t like spice, you could probably swap the gochuchang/sriracha out for barbecue sauce. I bet it’d be amazing. Do it. Actually, I’m gonna go do it. Okay bye.
